Resumen
El turismo gastronómico es una modalidad turística creada entre finales del siglo XX e inicios del XXI.Antes la alimentación era parte del viaje turístico, para convertirse luego en la motivaciónprincipal del viaje, simultáneamente con el desarrollo del territorio, las cocinas regionales, lasdenominaciones de origen, las rutas gastronómicas y la consolidación de los destinosgastronómicos. Este artículo estudia esas interrelaciones con el turismo gastronómico,abordándolas en tres partes. La primera trata sobre el origen y las distintas interpretaciones deltérmino. La segunda examina sus interrelaciones con el territorio, adscribiéndolas a un origengeográfico y al desarrollo de las cocinas regionales. La tercera hace referencia a la metodologíaaplicada, especialmente a las técnicas de estudio del arte y triangulación, utilizadas para ordenar ycategorizar la bibliografía revisada, 160 referencias, obtenida por investigación documental, con eluso de reconocidas bases de datos bibliográficos de Google Scholar y Scopus.

No passado, a comida fazia parte da viagem turística, mas depois se tornou a principal motivação da viagem, simultaneamente ao desenvolvimento do território, das cozinhas regionais, das denominações de origem, das rotas gastronômicas e da consolidação dos destinos gastronômicos. Este artigo estuda essas inter-relações com o turismo gastronômico, abordando-as em três partes. A primeira trata da origem e das diferentes interpretações do termo. A segunda examina suas inter-relações com o território, atribuindo-as a uma origem geográfica e ao desenvolvimento de cozinhas regionais. A terceira refere-se à metodologia aplicada, especialmente às técnicas de estudo de arte e triangulação, usadas para ordenar e categorizar a bibliografia revisada, 160 referências, obtidas por pesquisa documental, com o uso de bancos de dados bibliográficos reconhecidos do Google Scholar e Scopus. - Gastronomic tourism has become a tourism modality created between the end of the 20th century and the beginning of the 21st. Before, food was part of the tourist trip, then it becomes the main motivation for the trip, along with the development of the territory, regional cuisine, designations of origin, gastronomic routes and gastronomic destination. This article studies these interrelationships, addressing them in three parts. The first deals with the origin and the different interpretations of the term. The second examines its interrelationships with the territory, ascribing them to a geographical origin and the development of regional cuisines. The third refers to the applied methodology, and especially to the art study and triangulations techniques, used to organize and categorize the extensive bibliography reviewed, which includes some 160 references obtained by the documentary research technique, by bibliographic databases Scopus and Google Scholar. |
