El patrón alimentario en Venezuela puede entenderse como un
proceso que se ha configurado en diferentes momentos históricos, resultado
de fuerzas económicas, políticas, sociales y culturales que a
partir del siglo XV permitieron el contacto entre los pobladores originarios
de la región y los grupos étnicos provenientes de Europa y
África, derivando en un mestizaje gastronómico que en lo sucesivo se
nutrió de la llegada de inmigrantes de diferentes partes del mundo.
Proceso en el que resalta el arribo gradual de inmigrantes oriundos
principalmente de Europa y de Latinoamérica en el siglo XIX y más
adelante, de forma masiva en las décadas de los 50 y 70 del siglo XX,
como consecuencia de los acontecimientos sociopolíticos ocurridos en
dichas regiones. De igual manera, fueron determinantes los cambios
socioeconómicos y demográficos generados por la explotación petrolera
iniciada en la tercera década del siglo XX, contexto en el que tuvieron
lugar importantes migraciones del campo a la ciudad, la conformación
de grandes ciudades, el impulso de la industrialización en la
producción de bienes, el aumento del ingreso per cápita y la inserción del país en el mercado
mundial como exportador de petróleo, hechos
que en conjunto dinamizaron las prácticas alimentarias del venezolano
hasta la primera década del siglo XXI.

Resumen en otro Idioma | The food pattern in Venezuela can be understood as a process that has been set in different historical moments, the result of economic, political, social and cultural forces that from the 15th century allowed contact between the Inhabitants originating in the region and ethnic groups from Europe and Africa, deriving from a gastronomic mix, that was subsequently nourished by the arrival of immigrants from different parts of the world. A process that highlights the gradual arrival of immigrants mainly from Europe and Latin America in the nineteenth century and later, massively in the decades of 50 and 70 of the twentieth century, as a result of the sociopolitical events occurred in These regions. In the same way, the socioeconomic and demographic changes generated by the oil exploitation started in the Third decade of the twentieth century were decisive, in the context in which important migrations from the field to the city took place, the conformation of Big cities, the impulse of the industrialization in the production of goods, the increase of the per capita income and the insertion of the country in the world market as exporter of oil, facts that together dynamized the food practices of the Venezuelan Until the first decade of the 21st century. |
