Para determinar la presencia de E. coli enteroinvasiva, agente causal de diarreas en adultos y niños, se recolectaron muestras para estudios bacteriológicos de carne molida en el mercado municipal de Cumaná, Venezuela. Para la identificación de las Escherichia coli enteroinvasivas (ECEI), se siguieron las recomendaciones de Pérez et al. [26]), Omura [25], Frampton y Restaino [14]. La serología de las cepas sospechosas de ser ECEI se realizó con antisueros polivalentes. La capacidad invasiva de los microorganismos se confirmó mediante el test de Sereny y la producción de toxina termoestable con el test de Dean. El perfil de susceptibilidad antimicrobiana se determinó mediante el sistema automatizado Rapid ATB G. Se aislaron 290 cepas, de las cuales 32 (11.03%) fueron presuntivas ECEI (ONPG+, MUG+ INDOL +, ACETATO + LDC- M-) y de éstas, sólo 10 (3,44%) aglutinaron los antisueros, los serotipos predominantes fueron O144, O29, O143.Tres de estas cepas fueron positivas para el test de Sereny y todas negativas para el test de Dean. Las cepas aglutinables mostraron resistencia marcada contra Amoxicilina/Ac. Clavalúnico, Gentamicina y Trimetropim/Sulfametaxol, mientras que 1 sola cepa presentó resistencia a la Tetraciclina. Este estudio demostró la presencia de la ECEI en el tipo de alimento examinado lo cual representa un peligro potencial si no hay una vigilancia sanitaria tanto de los manipuladores del producto como de la temperatura y tiempo de cocción de los subproductos.

Resumen en otro Idioma | In order to determinate the presence of enteroinvasive Escherichia coli (EIEC), an agents which causes diarrhea in adults and children, bacteriological samplings of ground beef were collected in the Cumaná municipal market, Venezuela. The identification of EIEC was carried out according to y the method used by Pérez et al. [26], Omura [25], Frampton and Restaino [14]. The serology of suspicious strains was realized with polyvalent antiserum, the invasive property was confirmed by the Sereny test, and the heat-stable toxin production by the Dean test. The profile of anti-microbial susceptibility was determined by the automated system Rapid ATB G. A total of 290 strains were i*-/solated, of which 32 (11.03%) were presumptive EIEC (ONPG+, MUG+ INDOL +, ACETATE + LDC - M -) and from these, only 10 (3.44%) agglutinated the antiserum, the predominant serum types were O144, O29, O14. Three of these strains were positive in the Sereny test and all were negative in the Dean test. The agglutinable strains showed resistance against Amoxicilin/Clavalunic acid, Gentamicin and Trimetropim/Sulfametaxol antibiotics. Only one strain showed resistance to Tetracyclin. This study demonstrated the existence of ECEI strains in this product which represent a potential hazardous if there is no sanitary care and supervision of meat product handlers as well as of the temperature and cooking-time of sub-products. |
