| dc.description.abstract | En esta amplia revisión bibliográfica se incursionó en las relaciones existentes
entre los conceptos de patrimonio y turismo gastronómico, vinculándolos
críticamente con el desarrollo local. Este objetivo fue abordado en dos partes.
En la primera se definieron los conceptos básicos de patrimonio y turismo
gastronómico, analizando sus principales características y la manera cómo
estas dos actividades evolucionan y se relacionan entre sí, e influyen sobre
las estrategias de políticas de desarrollo económico y social. En la segunda
parte se definió el desarrollo local y sus estrategias de desarrollo, examinando
las condiciones que un bien debe llenar para ser patrimonializado y la manera
cómo el patrimonio cultural intangible, y especialmente el referido a los usos y
prácticas culinarias, puede convertirse en una herramienta innovadora y útil
para potenciar la modalidad de turismo gastronómico, generando impactos
positivos sobre el comportamiento de los distintos actores de las comunidades,
su empoderamiento y la expansión de los niveles del desarrollo local.

| dc.description.abstract1 | In this extensive bibliographical review, an incursion was made into the
relationships between the concepts of heritage and gastronomic tourism,
critically linking them with local development. To address this objective, we
proceeded in two parts. In the first, the basic concepts of heritage and
gastronomic tourism were defined, analyzing their main characteristics and
the way in which these two activities evolve and are related to each other, and
influence the strategies of economic and social development policies. In the
second part, local development and its development strategies were defined,
examining the conditions that a property must meet to be patrimonialized and
the way in which intangible cultural heritage, and especially that referred to
culinary uses and practices, can become a innovative and useful tool to promote
the gastronomic tourism modality, generating positive impacts on the behavior
of the different actors of the communities, their empowerment and the expansion
